Chicken is always a crowd-pleaser. You can make different recipes using chicken but this chicken kuzhambu is a very old method and we are still preparing though we have so many dishes using chicken. This basic chicken curry is very simple to make, and it goes excellent with rice, idly, dosa or chapathi.

This curry is my son Risshi’s favourite, so I make it very often. He calls it Brown curry. This is his usual dialogue. “Amma can you make brown curry and dosa for dinner”

Awww I just melt when he asks for that. I make it whenever he demands this curry.

You can adjust the thickness according to your preference. This is my recipe for simple kuzhambu using mutton, chicken or nattu kozhi (hard chicken). I have added fennel seeds, you can even add cinnamon and cloves for extra flavour and taste. Adding more curry leaves gives a beautiful aroma. I love to cook chicken kuzhambu using shallots, it adds taste to the curry.

Tips to make perfect Chicken Kuzhambu:

1. You can even add shallots instead of big onions.

2. Adding fennel seeds gives a good flavour.

3. You can add store-bought chicken curry powder for extra flavour.

4. Adjust water according to your thickness preference.

Here is the step by step process for Chicken Kuzhambu:

Add 4 tbsp oil in a pan, then add 2 onions and saute for a few minutes.

Now add 2 tbsp ginger garlic paste and cook for few minutes to remove the raw smell. Then add 2 tomatoes and saute well.

Add salt, ½ tsp turmeric,

Then 1 tbsp chilli powder, 1 tbsp coriander powder

1 tsp cumin powder and mix everything well. Then add little water to avoid burning and cook for a few minutes.

Add 1 tbsp fennel seeds and cook for few minutes. Then add a few coconut pieces and mix well.

Switch off the flame and allow the mixture to cool down completely. Take the mixture in a blender and grind it to a smooth paste.

Take the same pan and add 5 tbsp oil. Add 1 tsp mustard seeds and allow them to splutter.

Then add the ground paste and mix well. Add 2 sprigs curry leaves and 2 cups of water.

Allow the curry to come to a boil and add 750 gms chicken pieces.

Cover and cook for 6 to 8 minutes for the chicken to cook well. Now open the lid and cook for few more minutes to adjust the consistency. Finally, add chopped coriander leaves and switch off the flame.

Chicken kulambu is ready to serve with rice, idly or dosa.

Ingredients

  • Chicken - 750 gms
  • Onion - 2 numbers (roughly chopped)
  • Tomato - 2 numbers (roughly chopped)
  • Ginger Garlic Paste - 2 tbsp
  • Mustard Seeds - 1 tsp
  • Fennel Seeds - 1 tbsp
  • Chilli Powder - 1 tbsp
  • Coriander Powder - 1 tbsp
  • Turmeric Powder - 1/2 tsp
  • Cumin Powder - 1 tsp
  • Curry Leaves - 2 sprigs
  • Coconut - 5 to 6 pieces
  • Coriander Leaves - 2 tbsp
  • Salt, to taste
  • Oil

Method
