Tips to make perfect Vanjaram Fish Fry:
Try not to skip rice flour since it acts as a binding agent. If you don’t have rice flour, then replace it with cornflour.
Adjust chilli powder according to your preference.
You can even add food colour but I am not a great fan of artificial food colours.
Leave the marination for a longer time for better taste.
I have used coconut oil, but you can use any oil for frying.
I like shallow frying, but you can even do deep fry.
Adding an egg gives good texture but it is optional.
