Brinjal and Ridge Gourd masiyal is a quick and easy recipe for idly or dosa. This dish is very handy for busy morning times. Brinjal is not everyone’s favourite so this dish is an easy way to add in your diet. Combination of brinjal and ridge gourd along with onion and tomato gives different taste and flavour. Once you try this, I am sure this will be in your regular dinner or breakfast list. It is very healthy since we are adding 3 to 4 vegetables in one gravy and also the dish will be ready in 15 to 20 minutes so the perfect dish for busy mornings or lazy evenings.

They are so many variations in this recipe, some people add potato along with brinjal and ridge gourd for a thick consistency, but I try to skip potato because I often include potatoes in our dish so adding too much starch is not advisable and this dish tastes great even without potato. This dish stays good for 2 days in the refrigerator.

This is a regular dish and I make this almost every week. Whenever I go for vegetable shopping, I pick extra ridge gourd and brinjal just to make this masiyal since it’s my kids favourite. My children take extra dosa or idly when they have this as sides. This can be made with any regular Kadai or pan but I prefer a pressure cooker for fast cooking.

Tips to make perfect Brinjal Ridge Gourd Masiyal:

  1. There is no rule to add the number of brinjal, tomato or ridge gourd. You can play with your vegetables in this masiyal.
  2. I have added both green chillies and chilli powder, but you can change according to your preference. You can add more green chillies and skip chilli powder or vice versa.
  3. Mash the vegetables once they are cooked, that is important to get the desired consistency.
  4. We don’t add coriander or curry leaves but if you prefer then add them little.
  5. You can add one small potato for a thick consistency.
  6. If you don’t have a pressure cooker, then use any regular pan or kadai.
  7. Use Indian brinjal, do not substitute aubergine for brinjal.

Here is the detailed recipe:

In a pressure cooker, add 2 tablespoon oil and add 1 tsp cumin seeds and allow it to crackle.

Then add 1 onion (chopped) and saute for a few minutes. Now add 2 chopped tomatoes and saute along with the onion for a minute.

Once tomatoes are cooked well, add 2 green chillies
Note: You can more green chillies if you prefer more spicy

Add 1 tsp turmeric powder and 1 tsp chilli powder
Note: You can add more chilli powder as per your preference

Add salt to taste and mix everything well

Now add 2 brinjals (chopped) and 1 ridge gourd (chopped)
Note: You can add more brinjals. Do not add the aubergine, it will change the taste of the dish. Remove the sharp skin from ridge gourd. Do not remove the entire skin from ridge gourd.

Mix everything well. Add 1 cup of water and mix well.

Cover the cooker and cook for 3 to 4 whistles. Allow the pressure cooker to release its pressure on its own then remove the cooker lid. Vegetables are cooked well.

Mash the vegetables well using the masher and allow it to cook for a minute before serving

Kathirikai Peerkangai Masiyal is ready to serve with Idly or Dosa.

Ingredients

  • 1 big Onion (roughly chopped)
  • 2 Tomatoes (chopped)
  • 2 Brinjals (chopped)
  • 1 Ridge Gourd (chopped)
  • 2 Green chillies
  • 1 tsp Turmeric
  • 1 tsp Chilli Powder
  • 1 tsp Cumin Seeds
  • Salt, to taste
  • Oil

Method

  6. Then add 1 cup water and cover the cooker and cook for 3 to 4 whistles.
  7. Allow the cooker to release its pressure on its own.
  8. Open the cooker, mash the cooked vegetables using masher.
  9. Once mashed, cook for a minute.
  10. Brinjal Ridge Gourd masiyal is ready to serve with Idly or Dosa.
