We all know how healthy is green but sometimes it is very difficult to feed our children. This rice is made with spinach (palak) which is very good for health as it has a lot of health benefits. I make this rice very often for children and they finish them in no time. What else do we need when we can make healthy, tasty and moreover less time-consuming food. This recipe calls for very fewer ingredients.

Palak rice is made with lots of green along with rice and dal. I have added more green compare to rice and dal which gives excellent taste and flavour to the dish. In this recipe, I have added ½ cup rice and ½ cup dal for 2 cups of spinach. You can even add 3 cups of spinach. Adding more greens will increase the taste as well as makes the dish healthier.

My older son is fond of this dish along with potato roast or any fried vegetable. I add more ghee before serving so it adds more flavour to the dish. Adding ghee is very good for children. I keep stock of palak in my fridge always and make this rice when I run out of other vegetables. Sometimes I keep this ready in the evening when he comes back from the school so it’s another way of skipping junk.

Try this simple palak rice and serve with Potato Fry or Seppankilangu Fry.

Tips to make perfect palak rice:

  1. Soak rice and dal beforehand so that it helps to cook them fast.
  2. Add spinach more than rice and dal for better taste.
  3. Adding more ghee adds flavour to the dish.
  4. Adjust green chillies according to your preference.
  5. You can use any greens if you don’t have spinach.
  6. Don’t bother to chop the spinach, it will cook easily even if you add full leaves.
  7. You can even add more garlic, it adds more flavour and health benefits.

Here is the detailed recipe:

Take ½ cup rice and ½ cup moong dal together in a bowl. Take dal equal to rice to get a better taste.

Wash and soak them for 20 to 30 minutes.

Now take a pressure cooker, add 3 tbsp oil, then 1 tsp cumin seeds and ¼ tsp fenugreek seeds and allow it to temper.

Then add 1 onion finely chopped and saute for few minutes. Then add 2 green chillies (adjust to your preference)

Now add 3 to 4 garlic roughly chopped and saute for a few minutes. Now add 2 cups of spinach and mix well.

After cooking for a few minutes, then add washed and soaked rice and dal along with spinach and give it a mix.

Now add 2 or 3 cups of water. Adding more water makes the rice soft but if you want grainy rice then add less water. Then add salt to taste and 1 tbsp ghee, mix well.

Now cover and cooker and cook for 3 to 4 whistles for soft and mushy rice. After 3 whistles, switch off the flame. Allow the pressure to release its pressure on its own.

Then open the cooker and add 1 tsp ghee and mix well.

Serve hot with Potato Fry or Seppangkilangu Fry.

Ingredients

  • Rice - 1/2 cup
  • Moong Dal - 1/2 cup

  • Onion - 1 number (finely chopped)
  • Garlic - 3 to 4 cloves
