Millets are a great and healthy replacement for rice. There are different types of millets like barnyard millet, foxtail millet, finger millet, pearl millet and so on. I use almost all the varieties. They all look very similar and taste is also more or less similar to each other. I have used little millet (saamai) for this recipe but you can use any variety of millet to prepare the same recipe.

Little Millets are known as Saamai in Tamil.

This dish has become a staple food in my house. My kids love eating this porridge with some chicken curry. I always add finely chopped shallots before serving for better taste. Millets are great for weight loss.

All varieties of millet have their own positives. They are rich in carbohydrates, not protein. If you are on a Keto diet then millets are not the right choice. Consuming them in the right amounts can only help improve your overall health.

Tips to make perfect Little Millet Porridge:

  1. You can use any millet of your choice. I make the same porridge using foxtail millet, pearl millet, finger millet, barnyard millet, etc.
  2. I like to add milk to get a rich creamy texture, but you can skip the milk if you don’t prefer to add them.
  3. I have added buttermilk at the end, but you can also replace buttermilk with curd.
  4. Wash and soak the millet for 30 minutes before cooking for better texture.
  5. I enjoy eating millet porridge with pickle, but you can serve them with any sides of your choice.
  6. Garlic adds extra flavour and taste so try not to skip them.
  7. If you don’t have a pressure cooker, then use any pan to cook the millet. It might take a little longer but you can achieve the same taste.
  8. Add finely chopped shallots before serving. It adds extra taste.

Here is the step by step process for Little Millet Porridge:

Take a pressure cooker, add 1 cup little millet then add 1 cup milk,

2 sprigs curry leaves, 1 red chilli,

4 garlic cloves, 2 tbsp coriander leaves,

1 tsp cumin seeds, 2 cups of water

cover the pressure cooker and cook for 4 whistles.

Open the pressure cooker then add salt to taste, 1 cup of buttermilk of mix everything well.

Little millet porridge is ready to serve with a pickle or any sides of your choice.

Ingredients

  • Little Millet - 1 cup
