Potatoes are very easy to use in any recipe. It is one of my favourites vegetables. I make sambar, fry, kuzhambu, stuffed paratha, fritters and so on using potatoes. My older son Risshi loves aloo paratha so I make it very often. Now he started demanding for aloo tuk as well so this is added to my regular snack list. I have used baking potatoes but you can choose any potatoes that are available. Aloo tuk goes well with any variety rice, sambar rice, curd rice or serve it as a starter or as a snack. We do double frying which gives nice crispiness. You can even replace this with store brought potato crisps (potato chips) for a healthy version.

Tips to make perfect Aloo Tuk:

1. Make thick slices of potatoes.

2. While frying the potatoes for the second time keep the flame on medium heat.

3. You need not cook the potatoes for a longer time for the first time.

4. Amchur powder adds very good taste so try not to skip that.

Here is the step by step process for Aloo Tuk:

Take 3 medium size potatoes and peel the skin completely. Place the peeled potatoes in cold water for 10 minutes. Now remove and pat dry them.

Then make thick slices. Add a little salt and mix them well.

Take oil in a frying pan, now drop the sliced potatoes carefully in the oil one by one. Fry them on medium heat till they are soft. It takes about 3 to 4 minutes.

Drain the potatoes from oil and keep them aside.

Repeat the frying process for the rest of the potatoes.

Once all the potatoes are fried for the first time, now again put the fried potatoes inside the oil for second frying. Cook on medium heat till they are golden brown. Drain them from oil and keep them aside. Now add salt,

¼ tsp chilli powder, ¼ tsp coriander powder,

¼ tsp amchur powder and mix everything well.

Serve with any rice of your choice.
