Ghee Rice is a very popular one-pot rice cooked with some whole spices & onion. It is very mild flavoured rice which goes excellent with any spicy veg or non-veg curries or even with dals. This is cooked completely with Ghee which adds extra flavour to the rice. Try not to replace ghee with oil, then you will not get the exact ghee rice flavour. This dish is very common in most of the restaurants in South India. This is the best option when you are having a party or a guest at home. Ghee rice with any curry with some sides will make a complete Lunch or Dinner.

Ghee Rice is popularly known as Neychoru in Kerala. There are many different ways of making this dish, I have shown you my take on Ghee Rice. I like to add a few mint and coriander in my recipe, you can skip them since it is optional. I don’t think about adding extra calories in my diet when I am having ghee rice since we have to be a little easy while adding ghee. Ghee is the key ingredient in lifting the aroma of the entire dish. Try to use good quality ghee, I always add homemade ghee which adds more flavour.

Tips to make perfect Ghee rice:

  1. Try not to use oil instead of Ghee. Ghee is an important ingredient here.
  2. Fry soaked rice before adding water (check out our video). This will help to avoid sticky rice once it is cooked.
  3. Add good brand Ghee. Homemade Ghee adds more flavour.
  4. Adding mint & coriander leaves are optional but I recommend using.
  5. I have added a handful of cashews, but you can add more if you prefer.

Detailed Ghee Rice recipe:

First, we will fry the cashews for ghee rice. Take a pan or cooker, add 1 tsp ghee
Note: Try not to replace ghee with oil. Ghee is the main ingredient in this recipe.

Add a handful of cashews and fry them in the ghee for a few seconds. Remove the fried cashews and keep it aside.
Note: If you prefer, you can add more cashews.

In the same pressure cooker, add 1 bay leaf, 1 star anise, 1 cinnamon, 5 cardamoms, and 5 cloves. Saute for a few seconds. Then add 1 finely chopped onion.

Add 1 tbsp butter. I forgot to add ghee before adding whole spices so I am adding now. Saute the onions well in the ghee for 2 minutes.

Now add 1 tbsp ginger garlic paste and cook well to remove the raw smell

Once the raw smell is removed. Add 1 green chilli, few mint leaves, and a handful of coriander leaves.
Note: Adding mint and coriander leaves are optional but it gives a good flavour to ghee rice.

Saute everything well. Now add washed and soaked 1 1/2 cup basmati rice and fry them with onion and other ingredients for few seconds before adding water.

Note: Frying helps to avoid sticky rice once it is cooked. You can use either basmati or jeera samba rice.

Once the rice is fried, add water. For 1 1/2 cup rice, I am adding 1 1/2 cup water. I have added rice and water in an equal quantity. That works perfect.

Note: You can adjust water according to your rice and cooker.

Once water is added, add salt to taste and mix everything well

Cover the pressure cooker and cook for 2 whistles. After 2 whistles, switch off the flame and allow the cooker to release its pressure on its own before opening the cooker.

Note: 2 whistles works fine for my cooker. You can cook according to your pressure cooker.

Once the cooker is opened, add fried cashews and 1 tsp ghee (optional) and mix gently without breaking the rice.

Ghee Rice is ready to serve with any veg or non-veg curry

Ingredients

  • 1 ½ cup Basmati Rice (washed and soaked)
  • 1 Big Onion (finely chopped)
  • 1 Cinnamon, Star Anise & Bay Leaf
  • 5 Cardamoms
  • 5 Cloves
  • 1 tbsp Ginger Garlic Paste
  • 1 Green Chilli
  • Few Mint Leaves (opt)
  • Coriander Leaves – a handful (opt)
  • 12 to 15 Cashews
  • 2 tbsp Ghee
  • Salt, to Taste

Method

  1. In a pan or pressure cooker, take 1 tsp ghee and add the cashews and fry them for few minutes on medium heat till they are golden brown.
  2. Remove cashews in a bowl and keep it aside.
  3. Now in the same pressure cooker, add 1 bay leaf, 1 cinnamon, 1star anise, 5 cardamoms and 5 cloves and saute for few seconds.
  4. Then add 1 finely chopped onion and saute for few minutes.
  5. Add 1 tbsp ghee, add ghee before adding bay leaf. I forgot to add so adding it now.
  6. Saute the onion well in the ghee.
  7. Now add 1 tbsp ginger garlic paste and cook for few minutes to remove the raw smell.
  8. Then add 1 green chilli, mint leaves and coriander leaves and saute well.
  9. Now add the washed and soaked rice and fry along with onion and other ingredients for few minutes.
  10. Then add 1 ½ cup water and salt to taste and mix well.
  11. Cover the cooker and cook for 2 whistles.
  12. After 2 whistles, allow the pressure to release on its own.
  13. Open the cooker and add fried cashews and 1 tsp ghee (optional) and gentle mix everything well.
  14. Ghee Rice is ready to serve with any veg or non-veg curry.
