Ladies Finger is Vendakkai in Tamil. We can prepare many dishes using ladies finger. This recipe is a quick lunch box recipe which can be prepared in the busy mornings. It is an easy way to feed the children who are a picky eater or who don’t like ladies finger.

We make use of ladies finger in so many ways like sambar, kulambu, fry, gravy, etc. It is very tricky to choose this vegetable. The matured one will take longer time to cook. You can spot if it is matured or not just by seeing the vegetable. If you can feel the seeds from outside the vegetable then it means it is a matured one and the other way is to break the tail part of ladies finger, if it breaks immediately then it is the tender one.

I try to pick the very tender one which cooks fast and also tastes great.

Tips to make perfect Vendakkai Sadham:

  1. Try to pick tender ladies finger.
  2. Cook the vegetables completely before adding the rice.
  3. If you have leftover rice, you can use them. This is one way of using leftover rice.
  4. You can make the base curry a day before and store it in the fridge. Just add cooked rice before packing for the lunch box.
  5. Adding yogurt is optional but it helps to remove the stickiness from the ladies finger.
  6. If you don’t have yogurt, use 1 tbsp lemon juice.
  7. Try to use gingelly oil for very good flavour.
  8. I have added dry curry leaves but a fresh one gives a good smell.

Here is the detailed recipe:

Take a pan, add 3 tbsp oil and once the oil is hot, add 1 tsp mustard seeds.

When the mustard seeds are crackles, add 1 tsp cumin seeds and 1 tsp urad dal and allow them to cook until the urad dal turns brown.

Then add 1 tbsp channa dal and allow them to turn brown. Then add few curry leaves and saute well.

Now add 1 big onion (finely chopped) and saute well for a minute before we add the next ingredient.

Once onions are cooked, add 1 tomato (finely chopped) and saute well until the tomatoes are soft. Add salt so that the tomatoes will cook fast.

Then add 1 tsp turmeric, 1 tbsp chilli powder (I have added kashmiri chilli powder to get good colour) and 1 tsp cumin powder.

Once the spice powders are added, mix well and add 1 or 1 1/2 cup ladies finger (chopped small pieces). Adding more ladies finger gives good taste to the rice.

After adding ladies finger mix well and add 1 tbsp yogurt (this will help to remove stickiness from the vegetable) and cook for 5 to 7 minutes till the vegetables are cooked well.

Note: you can replace yogurt with lemon juice.

Once vegetables are cooked well, add 1 1/2 cup cooked rice and mix well with the masala

Ingredients

  • 1 cup Ladies Finger (you can add more if you prefer)
  • 1 ½ cup Cooked Rice
  • 1 Onion (finely chopped)
  • 1 Tomato (finely chopped)
  • 1 tsp Turmeric
  • 1 tbsp Chilli Powder
  • 1 tsp Cumin Powder
  • 1 tsp Mustard
  • 1 tsp Cumin Seeds
  • 1 tsp Urad Dal
  • 1 tbsp Channa Dal
  • 1 tbsp Yogurt/Curd
  • 10 Curry Leaves
  • Salt, to taste
  • Oil

Method

  1. Take a pan, add 3 tbsp oil, then add 1 tsp mustard seeds. Once mustard seeds are crackled, add 1 tsp cumin seeds, 1 tsp urad dal, 1 tbsp channa dal and 10 curry leaves and allow them to crackle.
  2. Then add 1 finely chopped onion and cook for few minutes.
  3. Now add finely chopped 1 tomato and saute well with the onions.
  4. Add salt to speed up the cooking process.
  5. Once onion and tomato are cooked well, add 1 tsp turmeric, 1 tbsp chilli powder and 1 tsp cumin powder and saute well to remove raw smell.
  6. Now add 1 cup finely chopped ladies finger and mix well with the onion and tomato.
  7. Add 1 tbsp yogurt (optional) to remove stickiness from the ladies finger.
  8. Cook ladies finger for 5 to 7 minutes, once it is cooked completely.
  9. Now add 1 or 1 ½ cup cooked rice and mix well with the masala.
  10. Ladies Finger is ready to serve.
