Drumstick Leaves are commonly known as Moringa Leaves. It has lots of medicinal benefits. It is rich in protein, calcium, iron, helps to increase haemoglobin count, fights against bacterial disease, it increases breast milk production, helps to treat diabetes, etc.

We can make different dishes using Drumstick leaves like sambar, soup, curry, stir fry, Murungai Keerai parupu, poriyal and many more dishes. Drumstick soup is very easy and quick to make. It is not only easy to make but also very healthy too. This can be consumed by both kids and adults.

Note:

It is always good to cook leafy vegetable in the open pot and not to use a pressure cooker or in a closed pot.

This can be served as a soup before food.

This is Drumstick Leaves. Very small leaves. It tastes bitter even after cooking but it will not be bitter in the soup. Kids will enjoy having this soup. It has got many benefits so try to include in your food at least twice a week if you can find this leaves.

Tips to make perfect Murungai Keerai Soup:

  1. If you don’t have shallots, then use big onions.
  2. You can even use 1 tbsp mint leaves and coriander leaves to add more flavour.
  3. Use drumstick leaves along with the stem.
  4. Adjust pepper powder according to your preference.
  5. Do not add more water as we won’t achieve the taste we expect.

 Here is the detailed recipe of Murungai Keerai Soup:

Take 500 ml water in a pan, add 1 tbsp cumin seeds, 1 tbsp coriander seeds

Then add 2 garlic cloves, 7 to 8 shallots

1 small tomato and allow it to cook for 5 minutes.

Then add 2 cups drumstick leaves, a sprig of curry leaves and mix well.

Now add ½ tsp turmeric and again cook for 4 to 5 minutes.

Once the leaf and the ingredients are cooked well, drain the water and ingredients separately.

Grind the separated ingredients by adding little water or the soup water and make a fine paste.

Take a pan and keep the sieve on the pan. Then add the soup water along with the ground paste and drain them completely.

Drain them completely using a spoon.

Note: You can discard the remaining waste or you can mix them in the water and use them as plant food.

Finally, add salt and pepper powder in the soup water and warm them for a few minutes before serving.

Drumstick leaves cooked with spices and shallots to make a very thin gravy to enjoy with rice or as a soup.

Ingredients

  • 2 cups Drumstick Leaves
  • 1 tbsp Coriander Seeds
  • 1 tbsp Cumin Seeds
  • 7 to 8 Shallots
  • 2 Garlic Cloves
  • ½ tsp Turmeric
  • 1 small Tomato (roughly chopped)
  • 1 sprig Curry Leaves
  • ½ tsp Pepper Powder (adjust to your preference)
  • Salt, to taste

Method

  3. Now drain the soup and ingredients separately and grind the cooked ingredients to a smooth paste by adding very little water or the soup water.
  4. Take a pan and keep the sieve on the pan.
  5. Now in the sieve add the grounded paste and add soup water in the grounded paste and drain them completely using a spoon.
  6. Now add some salt and pepper powder and mix well.
  7. Allow the soup to cook for a few minutes before serving.
